Roasted Chickpeas- Best Open Air Cinema Snack Ever

Summer time is open air cinema time, I just love watching movies under the roof of the world. This week I wanted to share a delicious alternative to popcorn: roasted chickpeas. They are so easy to make and keep for quite a long time or rather until the next movie.

You can either take them in a jar or just a big paper bag. Make sure you roast quite a few batches, especially if going with friends, because roasted chickpeas taste best when shared.  You can get your mates to bring some other snacks. Evening sorted.

The high protein content of chickpeas results in you feeling satiated for quite some time, which makes them such a great snack. They are rich in insoluble fibre, which not only keeps you fuller for longer, your good bacteria love it too. So, one winner snack for open air movies or when out and about.

Here is what you need to make them:

Roasted chickpeas

1-2 can of chickpeas ( 400-800g)
1-2 tbsp of coconut oil – melted
1/2-1 tbsp of Ras Al Hanut spice
OR mix 1/2-1 tsp ground turmeric, 1/2-1 tsp of ground cumin, 1/2-1 tsp of ground coriander
a pinch of salt and ground ginger
Fresh coriander – finely chopped – optional

Method: Pre-heat the oven at 175C and line a baking tray or two with baking paper. Drain and rinse the chickpeas and remove any lose skin. Mix melted oil with the spices and salt until well combined, then add to the chickpeas and mix until well covered with the spice mix. Now spread the spiced chickpeas on the baking trays and bake for 30 -35 minutes until crisp. For an even bake, give the baking trays a shake half way through.

Leave to cool and store in an air tight container, such as Killner or jam jars.
