Orange, Coconut & Cranberry bites

This is going to be a rather brief post as I just wanted to wish you a very Merry Christmas with this lovely treat full of Christmas flavours. Rich in good fats, minerals, vitamins, plant protein and fibre these little balls will keep you going until the Christmas dinner is served and here is what you need:

Ingredients: ( ideally organic)- makes around 10
1 cup of coconut flakes
1/2 cup of almonds
1 tbsp of cashew butter
2 tbsp of dried cranberries
1 tbsp of raw honey
1/2 tsp of sea salt
1 tbsp of chia seeds
2 tbsp of orange peel finely chopped (make sure you have the white part on it as well)
1 cup of shredded coconut for decorating the bites

Method:
1.Place all ingredients, but the shredded coconut in a blender and blend until you get a sticky texture.
2. Take a tbsp to get equal sized portions and roll into a balls
3. Roll each coconut ball in the shredded coconut and leave to set in the fridge.
4. They keep in the fridge for up to a week- just make sure you keep them in an air tight container
