Butter Bean Hummus with spiced Crackers

In the run up to Christmas – only one week to go- you are probably busy running around going to Christmas parties and planning your Christmas dinner. Here is a quick snack you can  easily prepare in advance, a creamy butter bean hummus with spiced crackers.  Just make sure you make quite a few crackers as they are rather delicious : )  Another tip, get ingredients for some extra portions of hummus and make some on the spot if needed.

In some parts of the world butter beans are called Lima beans, their soft buttery texture makes this hummus extra smooth and the crunchiness of the crackers really bring a delicious fibre  rich contrast. This  snack delivers not only flavour and texture, it is rich in proteins and omega oils as well as gut soothing spices, so you will feel fuller for longer and get to keep a flat tummy and here is what you need.

Spiced Crackers with Butter Bean Hummus- Serves 3-4

Ingredients: (ideally organic)

Butter Bean Hummus
400g butter beans ( canned)
1-2 clove of garlic
2 tbsp tahini
2 tbsp of water
8 tbsp of cold pressed extra virgin olive oil
1 tbsp coriander seeds
1 tsp cumin
2 -3 tbsp of freshly squeezed lemon juice
freshly ground pepper
1 pinch of sea salt

Spiced crackers
2 cup of linseeds
1 cup of hemp seeds
1 cup of sun flower seeds
1 tbsp of brown rice miso paste
1 inch of organic crushed ginger
1 tsp of chili flakes
2 cloves of garlic
330ml water

Method:

1. For the hummus, place all ingredients in a food processor and blend until smooth. It will keep in an air tight jar for up to a week, so you can prepare it in advance.  Season to taste and serve with crackers or enjoy with fresh vegetables.

 

 

2. For the crackers, mix all ingredients, leave to soak for at least 2-3 hours, spread out thinly on baking tray lined with baking paper, bake at 100/120C for 45-60 minutes. Depending on how thick you spread out the cracker mix, the baking time might be a bit more or less: you can test by holding your hand above the mix, it should feel dry and when lifting up the baking paper the linseed mix should be stiff, if you can still bend it, it needs to stay in for longer.

Once baked leave to cool and cut into squares using a pizza knife. They keep nicely in a killner jar, just make sure the lid is closed tightly, otherwise they might go soft. Have fun baking and making this delicious snacks for Christams.
